...adding to your case-polishing warning, I'd add being specific about how you want the crown treated.  I've found that during servicing the crown is often treated like the mainspring - replace it every time as a matter of policy.  This is perhaps not such a big deal for a modern watch, but for a vintage piece the original crown can be very hard to get NOS, and while a watchmaker will use an alternative that fits, this can change the character of the watch.

When you have your watches serviced are replaced parts ever returned to you? What is your experience with the practices of different companies or watchmakers? Have you ever asked that parts be returned with the watch, and do the service departments comply...

for the old parts to get them back (and be ready for some very weird looks) Generally, the "break down" of service details is pretty generic. And one other thing that has come up before but bears repeating - if you DON'T want the case repolished, be sure ...

I typically don't return the old parts

To my customers unless they ask for it specifically, and that is very rare. I have no problem doing so, but why anyone would want an old greasy automatic mainspring, used gasket, or faulty reversing wheel is a bit puzzling unless it is to prove that parts...

Andrew, after servicing an old Seamaster, Omega returned to me a little baggie with old parts: wheels, hands, bridges, etc. Didn't return the mainspring or old crystal though (maybe to Al's point: who wants a greasy mainspring?). I didn't ask them for thi...
