Quartz watches and smartwatches are completely two different beasts.
And screen size is not the limitation on how well smartwatches will develop. If that were the case, why even bother with wrist watches, people would have stick to pocket watches, you can cram a lot more functions and complications in it.
Although it sounds only a few seconds of differences, a device on your wrist compare to having to take it out of the pocket or purse is easier to interact with surroundings. Smartwatches or wearables are meant to cut out those small annoyances, and if people adapt to it or used to it, it will fundamentally change how people use their wrist device.
Like what I mentioned above, digital camera killed film industry not really because it offers better picture quality, but because it offers conveniences that people are used to (Instant review, simple storage, easy to share, and etc.), and can't live without.
Of course, it will largely depends what can wearables interact with and what kind of conveniences it brings, that's why it is not only up to Apple, but application developers, and various businesses that makes up the ecosystem, missing one, and it won't fly.
